  • 1 cup (200g) long-grain white rice, rinsed until water runs clear
  • 2 cups (480ml) water
  • A pinch of salt
  • 1 lb (450g) large shrimp, peeled and deveined
  • 1 tbsp (15ml) olive oil
  • 1 tbsp (8g) chili powder
  • 1 tsp (2g) smoked paprika
  • 1/2 tsp (1g) ground cumin
  • 1/2 tsp (3g) kosher salt
  • 1 cup (165g) diced ripe mango
  • 1/4 cup (40g) finely chopped purple onion
  • 1 tbsp (15g) minced green jalapeño
  • 2 tbsp (5g) chopped fresh cilantro
  • 1 tbsp (15ml) fresh lime juice
  • 1/2 cup (120g) mayonnaise
  • 1 tbsp (15g) sriracha (or your favorite hot sauce)
  • 1 tbsp (15ml) lime juice
  • 1 large ripe avocado, sliced into a fan
  • 1 tbsp (9g) black sesame seeds

Instructions

  1. Rinse 1 cup long-grain white rice under cold water until it runs clear. Add to a pot with 2 cups water and a pinch of salt.
  2. Bring the rice to a boil, reduce to a gentle simmer, cover, and cook for 15–18 minutes until water is absorbed. Keep covered and steam for 5 minutes, then fluff with a fork.
  3. Dice 1 cup mango, finely mince 1/4 cup purple onion and 1 tbsp jalapeño, chop 2 tbsp cilantro. Toss together in a bowl and squeeze in 1 tbsp lime juice. Set aside to let flavors marry.
  4. Combine 1 tbsp chili powder, 1 tsp smoked paprika, 1/2 tsp ground cumin, and 1/2 tsp kosher salt to make the chili spice blend.
  5. Whisk 1/2 cup mayonnaise, 1 tbsp sriracha, and 1 tbsp lime juice until smooth. Thin with a few drops of water if needed and transfer to a squeeze bottle or zip-top bag for drizzling.
  6. Pat 1 lb peeled and deveined shrimp very dry with paper towels. Toss with 1 tbsp olive oil and coat evenly with the chili spice blend.
  7. Heat a cast-iron skillet over medium-high heat until just before smoking. Add shrimp in a single layer and sear for 2–3 minutes per side until charred at the edges and opaque, cooking in batches if needed to avoid crowding.
  8. Halve, pit, peel, and thinly slice 1 large ripe avocado just before serving; gently fan the slices.
  9. If rice has rested, fluff it again with a fork and divide into bowls as the base.
  10. Assemble bowls by arranging rice, charred shrimp, avocado fan, and a spoonful of mango salsa in separate sections.
  11. Drizzle the creamy lime-chili sauce over the bowls in a zigzag pattern.
  12. Finish each bowl with a sprinkle of black sesame seeds and a few fresh cilantro leaves.
