  • 2 large sweet potatoes
  • 1 pound ground turkey
  • 1 can black beans, rinsed and drained
  • 1 cup shredded cheese (cheddar or your favorite kind)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Toppings of your choice (e.g., sour cream, green onions, avocado)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Prick sweet potatoes several times with a fork.
  3. Bake sweet potatoes 45–60 minutes, until soft when pierced.
  4. Alternatively, microwave sweet potatoes 6–10 minutes depending on size or cook in an air fryer until soft.
  5. While potatoes bake, heat a skillet over medium and cook ground turkey seasoned with chili powder, cumin, salt, and pepper until browned, about 7–10 minutes.
  6. Rinse and drain the black beans.
  7. Stir drained black beans into the turkey mixture and cook 2–3 minutes to warm through.
  8. When potatoes are done, cut each in half lengthwise and scoop out some flesh to form a boat.
  9. Fill each potato half with the turkey and black bean mixture and top with shredded cheese.
  10. Return filled potatoes to the oven at 400°F (200°C) for about 10 minutes, until cheese melts and filling is bubbly and warm.
