  • 1 tbsp Baking Powder (ensure it’s fresh)
  • 1/2 tsp Baking Soda

  • 1 cup Milk (dairy or dairy-free)
  • 1/2 cup Unsalted Butter (melted, can substitute with oil)
  • 2 large Eggs (can substitute with flax eggs)
  • 1 tsp Vanilla Extract (use pure extract)
  • 1 cup Fresh or Canned Peaches (diced, well-drained if canned)
  • 1/2 tsp Ground Cinnamon
  • 1/4 cup Brown Sugar or turbinado sugar (for a crunch)
  • 1 tsp Ground Cinnamon (for topping)
  • 2 tbsp Brown Sugar or coconut sugar (for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin pan with paper liners.
  2. Dice fresh peaches or drain and dice canned peaches well.
  3. In a large bowl, whisk together flour, granulated sugar, baking powder, baking soda, and salt.
  4. In a separate bowl, whisk milk, melted butter, eggs, and vanilla extract until smooth.
  5. Pour wet ingredients into dry ingredients and stir gently until just combined, leaving some lumps.
  6. Fold diced peaches into the batter using a spatula.
  7. Spoon batter into muffin cups, filling each about two-thirds full.
  8. Mix cinnamon and brown sugar in a small bowl for the topping and sprinkle evenly over each muffin.
  9. Bake for 18–20 minutes until muffins are golden and a toothpick inserted in the center comes out clean.
  10. Cool muffins in the pan for 5 minutes, then transfer to a wire rack to cool.
