  • 1 pound shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup quinoa, uncooked
  • 2 cups water
  • 4 cups romaine lettuce, chopped
  • 1 cucumber, sliced
  • 1 cup tomatoes, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup kalamata olives, sliced
  • 3/4 cup feta cheese, crumbled
  • 1 lemon, cut into wedges
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Pat shrimp dry and toss with olive oil, minced garlic, paprika, dried oregano, salt, and black pepper; let sit a few minutes.
  2. Rinse 1 cup quinoa, then cook with 2 cups water until tender and fluffy; fluff with a fork and set aside.
  3. Chop romaine lettuce, slice the cucumber, dice the tomatoes, thinly slice the red onion, slice the kalamata olives, crumble the feta, cut the lemon into wedges, and chop the parsley.
  4. Heat a skillet over medium-high and cook the shrimp in a single layer 2–3 minutes per side until pink, opaque, and lightly golden; remove from heat.
  5. Divide chopped romaine and cooked quinoa among four bowls, then arrange cucumber, tomatoes, red onion, olives, and shrimp on top.
  6. Sprinkle bowls with crumbled feta and chopped parsley and squeeze fresh lemon juice over each bowl before serving.
