A moist, rich quick bread made with chocolate cake mix, shredded zucchini, eggs, and chocolate chips. An easy way to incorporate veggies into a delicious chocolate treat.

  • 1 box chocolate cake mix (13.25 ounces)
  • 1 ½2 cups zucchini, finely shredded
  • 3 large eggs
  • 1 cup mini chocolate chips

Instructions

  1. Preheat oven to 350°F; spray two loaf pans with non-stick spray and line the bottoms with parchment or wax paper.
  2. Wash zucchini and finely shred it.
  3. Whisk the eggs in a small bowl.
  4. Toss the mini chocolate chips with 1 tablespoon of the dry cake mix in a small bowl to coat.
  5. In a large bowl, combine the remaining chocolate cake mix, shredded zucchini, and whisked eggs.
  6. Mix with a spoon or spatula until just combined, allowing the batter to loosen as the zucchini releases moisture.
  7. Fold in the coated chocolate chips until evenly distributed.
  8. Divide the batter evenly between the prepared loaf pans and smooth the tops; sprinkle extra chocolate chips on top if desired.
  9. Bake for 40–45 minutes, or until a toothpick inserted in the center comes out mostly clean.
  10. Let the loaves cool in the pans for about 10 minutes.
  11. Run a knife along the edges and transfer the loaves to a wire rack to cool completely.
