A quick and easy side dish of crispy air fryer roasted carrots coated in a sweet honey glaze, perfect for elevating any meal with tender carrots and caramelized edges.

Ingredients

Scale
  • 1 pound carrots (about 450 grams), peeled and cut into sticks about 3 inches long and ½ inch thick
  • 2 tablespoons honey (raw local honey preferred)
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • ½ teaspoon smoked paprika (optional)
  • ¼ teaspoon garlic powder
  • 1 teaspoon fresh thyme or rosemary, finely chopped (optional)

Instructions

  1. Peel and slice carrots into sticks about 3 inches long and ½ inch thick.
  2. In a mixing bowl, toss carrots with olive oil, salt, black pepper, smoked paprika (optional), and garlic powder until lightly coated.
  3. Preheat air fryer to 400°F (200°C) for 3–5 minutes.
  4. Arrange carrots in a single layer in the air fryer basket without overcrowding.
  5. Air fry at 400°F for 10 minutes.
  6. Shake the basket or flip the carrots with tongs for even browning.
  7. Air fry another 5–7 minutes until tender and edges are golden. Add 2–3 minutes more for extra crispiness, watching to avoid burning.
  8. While carrots cook, warm honey in a small bowl or microwave for about 20 seconds and stir in chopped fresh thyme or rosemary if using.
  9. Immediately drizzle the warm honey glaze over the hot carrots and toss gently to coat every piece.
  10. If glaze softens the crispiness, return carrots to the air fryer for 1–2 minutes to firm edges.

Notes

Do not overcrowd the air fryer basket to ensure crispiness., Add the honey glaze after cooking to prevent burning., Cut carrots evenly and thin for better crisp edges., Leftovers reheat best in air fryer or oven to maintain crunch. Avoid microwaving to prevent sogginess., Maple syrup can be used instead of honey to make the recipe vegan., Oven roasting option: Roast at 425°F (220°C) for 20–25 minutes, flipping halfway; add honey glaze after roasting.
