Instructions

  1. Cut chicken into cubes and pat dry with paper towels.
  2. Season chicken evenly with salt, paprika, and black pepper.
  3. Heat a large skillet over medium heat and add oil; heat until shimmering.
  4. Add chicken in a single layer without crowding the pan; cook in batches if necessary.
  5. Cook chicken undisturbed until a golden crust forms on the bottom.
  6. Flip chicken pieces and cook until cooked through and lightly browned on all sides.
  7. Reduce heat to low before adding any dairy.
  8. Spoon cottage cheese over the chicken and stir gently as it warms and softens into a creamy sauce.
  9. Sprinkle Parmesan cheese in small batches, stirring after each addition to melt and coat the chicken.
  10. Taste the sauce and adjust salt and black pepper as needed.
  11. Let the sauce bubble gently for 2–3 minutes until it thickens slightly.
